It sounds like you are really carving. That is no skidding and loosing speed that way. Speed control when carving comes from turning back across the hill and completing the turn in a way most skidding skiers do not. At first you will need plenty of room and a gentle slope. Wait for the run to clear so you don't have to worry about other people. Make full turns comming back across the hill each time. As said above, try to transition from edge to edge as early as possible. Loading the ski tips and extending your legs to bend the skis will tighten things up. It does take time and practice.
Watch for Old schoolers comming down behind you. They have no clue what real carving is and can not anticipate your traverse speeds.

skis to blades

Are the blades you are using non releasable ?. If so, that's asking for leg injuries. There are now blades with releasable bindings.
As for you question, have you tried some real shaped skis, like the Atomic Metrons or Salomon Scramblers. They will have a radius close to your blades and you can ski these much shorter than a traditional ski, so they give you the best of both worlds.

Do Carvers Suck?

Seems to be mostly brits here. I'm a Brit, but live in the US. so I appriciate the limited access to snow.
If you really want to carve and have limited access (like a few weeks a year to snow), then get some inline skates. get high quality ones and a full set of crash pads. Read all you can on inlineskating, esp how to turn. Learn to commit yor weight to the inside of the turn, to move inside leg foreward. angulate to decrease turn radius. and above all get your inside leg out from under you. Do this for a summer and you will just rip on carving skis next winter.

Do Carvers Suck?

99% of skiers suck at carving, even on carving skis. It seems to me that traditional ski instruction actually hinders devlopement of good carving technique. I believe there are moves in europe to rectify this, but what I see here in the US is more of the same. Sports like skiing with an emphasis on instruction always have problems adjusting to a revolutionary new developement. Will these new carvers develope off piste skills ?, maybe not, but they'll learn to carve better than the old schoolers.
