December 15th is pretty early in the season, most resorts will only be partially open at this time.
January would be a much better bet both with choice and likelihood of good snow.

If it has to be December than go really high.
Tignes or Val Thorens in France would be worth looking at (and lively).
Hopefuly others will recommend other resorts in other countries but I am a Francophile.

With a package holiday I suppose it depends on where you are coming from?

IMHO - skiing is a bit like riding a bike, once mastered it remains just as easy to fall off and crash as it ever was.

We had a pretty disastrous stay in Grindewald a few years ago. Don't think suggesting there would get me any brownie points.
Although on paper it is a good idea.
