The obvious answer is get a bigger car, estate or MPV. Someone in the family may have one you could borrow?
Alternatively, we are taking 2 cars for 5 of us: 1 is the luggage mule with everything in, seats folded down, the other is taking people and hand luggage.
Our trip to Gatwick is 140 miles each way, costs roughly £40-£50 in fuel each way so may be cheaper way of doing it?
TIP: if you are travelling from the north, dont go down the M11 and over Dartford, instead take the M1 south and M25 past Heathrow. Dartford has been annoying lately, plus there is a long stretch of roadworks from J5 to J7 which adds time and causes lots of delays and the average speed cameras as well.

I did buy a bigger car ,i brought a d-cab pickup for a bit of winter fun and it's what i'll be using for the trip.I can only get 2 suitcases and 2 boardbags and 1 passenger in my car .This year it's 7 snowboard bags and 3 cars for 8 of us . If we all lived locally to each other we might of hired a mini bus but everyones dotted about .
It's all sorted now ,i threw the bag on the roof for a demo run and everything seems ok it's just very noisey and the un-aerodynamic shape of the roofbars and bags probably knock the mpg down to not even going to look mpg . :-)
