I went one August - good snow, overall. Skied in the main New South Wales areas of Thredbo and Perisher-Blue Cow - both have plenty to offer, but the lift pass prices are on the pricey side.

Based ourselves, with a car, in the town of Jindabyne (a bit like an Australian Aviemore!) and chose a different area each day.

If you are coming for the season then all the main resorts offer great skiing with modern infrastructure, lots of terrain, long runs and excellent snowmaking.

If you are travelling and just want to get a week or two on skis then Thredbo and Perisher are great if you are in or around Sydney. If you are down around Melbourne then Hotham and Falls are great and Buller is close enough to the city for a weekend trip.

WRT to Oz; I say don't bother. The skiing is rubbish, the lift system a joke and the prices are ludicrous.
I have heard that NZ may be better but no first hand experience there.

Try the resort sites to get a good overall picture of both Australia and NZ
