Hop Suisse! I know that Chemmy Alcott is British and all that but still it's a bit weird to see her picture with the article that says "Double winners of Ladies Downhill". And pretty much every British media outlet reporting on the results give to her an equal or even more space than to two winners. She finished 19th.
BBR OR CHAM?

Good choice with Scott. I liked every ski by Scott that I tried. Was totally unimpressed by BBR - too turny for my liking and type of skiing, I think if I needed 10m radius I would just get a slalom ski. I tried Soul 7 yesterday. Probably shouldn't have as I really enjoyed them and I have enough skis already so should avoid buying anything for at least 2 seasons.
Opinions on a down jacket.

I have both down jacket and down vest and prefer vest as an insulating layer, I don't like the bulk from the jacket around my arms. You should try it on to see how it fits under the shell.
Courmayeur is probably your best bet.
Ski servicing?

Depends on a season. In a good season I only wax when I feel like skis need it, in a season like a current one I also do edges, but not too often. Actually only serviced one pair of skis once at the end of December after buying them in February 2012. Already skied on them about 10 times since the service so probably will drop them in a shop after next weekend. Bases can do with a little repair as no matter how I try not to hit any rocks sometimes I still do. I am not a racer so don't worry too much about tuning. Whatever is the factory setting I don't change it. I've got the stone but never used it either.

I totally suck at snowboarding, but I only did it for a week or so and then decided to learn to ski instead. But I know lot of people who don't suck and will take any run or steep traverse on a board.

Skiing off piste during lessons.

I think when you are taking the lesson you are insured in case of accident. You can ask instructor, but you won't be taken anywhere considered dangerous. You probably should ask in any case just to get better understanding of terrain and conditions.
