We stayed in Ortisei (Val Gardena, Dolomites) last Christmas at Hotel Grones. Price not for the faint hearted but worth every penny. Had a complete blast.
Also heard good things about the Adler (also in Ortisei). Actually that part of the world is full of top notch places that offer better bang for your buck than France and Austria.
PS - We had perfect skiing conditions and the area is great for beginners and intermediates. Good luck with whatever you decide to do.

You've probably booked something already, but by far the best place I have ever stayed is La Perla in corvara in the Italian dolomites. It's a small leading hotels of the world and defiantly deserves its reputation. x
