I'd looked at Flaine but seemed to be all self catering (cetainly with the big TOs like Inghams etc)

Crystal do run the Clubhotel Le Totem in Flaine. I stayed there a few years ago and going back at end-Feb. Perfectly adequate hotel now being operated by a Swedish company for Crystal. Food was excellent last time we were there but don't know how the new operators are getting on! It is relatively reasonably priced - some friends have just booked for end-Feb for €699 out of Dublin on a full board basis (discounted by €170 from brochure price).

I'm just back from a week in the Chamonix valley, and I'd definitely recommend it - and there's plenty of budget accommodation to be had too

yeah, i'd recommend Chamonix. Easyjet to Geneva and then its only an hour and a half transfer. You can find cheap accomodation, and there are so many pistes to keep you occupied, or endless off piste if that is your thing.
There will also be plenty of snow there at that time - the season finishes in mid May but only because they have to let the seasonal staff away, not because there is no snow!!
