Hi Amy
Check out Dolomiti Superski website http://www.dolomitisuperski.com/en if you haven't had a chance yet.Lots of information about the different ski areas.
Arabba has been a favourite base amongst my more adventurous friends unfortunately I have to stick to the pistes these days. I've heard, and seen, it is great to ski/board down from Passo Pordoi (for experts/with a guide), also free riding off the Marmolada. If you have a guide you'll have no trouble finding a great skiing around/off Sella Ronda circuit.
We think the Dolomites are the most beautiful and keep returning year after year.

If you're interested in riding off piste in the Dolomites get a copy of Francesco Tremolada's book "Freeride in Dolomiti" http://www.versantesud.it/en/shop/freeride-in-dolomites/ If you search for the names of the runs you will find loads of videos. Some of them can be bit tricky, especially on a snowboard.
Other areas in the region, but outside the Dolomiti Superski area that are worth a look are Sella Nevea and Sulden am Ortler.

Thanks Flatcountryskier! We've been all over those websites - maybe I'm more on info overload than anything else! The more we look, the more Arabba seems like it would fit us best.
Thanks Swingbeep for the video. I actually just looked up that book you mentioned - I'm not sure I can get it sent here (I live in the Middle East) but will contact the publisher to try. Again, great suggestion, it's right up my ally!

The video of the guys in the narrow and extremely steep gulley was scary. Definitely not for me
