Hi Michael - welcome to J2Ski.

Tough choice! 8) You're in luck though as one of our regulars, Tony_H, has visited both and very kindly wrote up some great trip reports:-

PM me if you want to know anything. Serve Che one of my fav places, but done it 5 times now so been going elsewhere since the last trip. Superb ski area though, and cheap for France. Villeneuve demo the best place to stay, decent access to ski area and lovely old rustic village.
St Moritz is paradise skiing, empty slopes wonderfully groomed, 2 cracking areas as well. But its hideously expensive for food and drink being Swiss.

Depends what you want - Serre Che can get busy at peak times and some of the runs off get messy, but you can explore a big area with links, good off piste everywhere. St M is high class skiing, some cracking off piste on the Corviglia sector as well, everyone should ski St M once in their lifetime.
