All should have good snow in Jan. Usually the best conditions of the season, plenty of snow and cold enough to keep it in tip top condition.

Zell am See is a good bet 'cos you also have the Kaprun glacier there as a back-up plan just in case. But many resorts open early December in Austria so by mid-Jan we should be in full swing.
Best dump of snow last year was pre-xmas and then 26th Jan. Went downhill from there (pardon the pun).

Have skied in Austria in late January for the past 7 years at Schladming and Soll which are both relatively lower altitude resorts. Always had fantastic skiing mainly due to the weather but the Austrian resorts have fantastic snow canon infrastructure as a back up. You will be fine.
