Is that coz everyone else will be avoiding it?
Skiing off piste during lessons.

Ask the instructor why he/she considers it safe - as Adders says.
Instructors are not infallible.

Hope you enjoy the skiing.

Sierra Nevada near Grenada would be your closest place.
I skied there for a day about 10 years ago - it is a small resort and ideal for beginners.

Hiring boots and skis is simple in the resort - you would need to have the correct clothing before you went.

The weather is very variable over the season from baking hot in the sunshine to very cold as you would expect in a ski resort.

Have a search on the internet for the resort and see what accommodation is available, the skiing side is simple to organise except during main holiday periods perhaps. You would need to organise lessons.

Good luck.

I think you have a great idea Steve.

Spending a bit of time working on something specific during a holiday is very beneficial in my view.
An hour or so, or whatever suits, focussing on technique has to help.
BBR OR CHAM?

One ski that you should consider is the Movement Jam - great in all snow conditions including knee high powder and held their edge well on hard pack but most important of all they were great fun.

Skied the 2013 Movement Jam last season in Tignes in all conditions.
A very good ski as MogulMonkey said.
Not as quick edge to edge for me as the BBR 8.9 and not as stable as BBR 8.9 at speed on hard pistes.
But not as radical looking as BBR and probably a touch more forgiving of posture etc.
BBR OR CHAM?

The BBR 8.9 @176 (5'10") is my all time favourite - wonderful ski.
It can be anything you want from pootling along to crank it on an edge and it flies. Very short radius so turns on a sixpence (which I like). I found it great in crud and spring like off-piste but haven't had the opportunity to ski it in anything fresh.
Very stable at speed.
BUT - very mixed reviews. Seems to suit some people and others hate it.
Definitely want to consider something else if you have any tendency to sit back.

I don't know the Cham 87 Blue - but the orange one I have been on briefly. A really nice ski but not as nimble or stable as the BBR. Only skied on piste.

The BBR 8.9 is now called the BBR 9.0 - pretty sure the ski geometry and construction hasn't changed, just a face lift for this season.

Any chance you can demo them??
