Cannot agree with not skiing a slope unless you can make nice rounded linked turns on it, Ranchero. You've got to learn to adapt your skiing to the conditions, and learning how to cope safely (but not necessarily ski well) on steeps/crud is part of that. I'd agree that many people ski slopes that are too steep for them; some people are clearly not in control. But pushing yourself in a controlled manner and learning how to ski steeps/crud is all part of the experience. And with practice you'll be able to ski the steeps with nice rounded turns (I know I cannot).

A few private lessons on the dry slope may help, but make sure you happy a private lesson or two in resort. Buy your own boots. Rent some decent skis suitable for your ability - do not necessarily hire the most expensive - they will often be for advanced skiers and you will not be able to ski them properly
