If they are still not right you should go back and explain - at least give them the opportunity to make it right be it with financial compensation or otherwise. If that fails you need to go and see another bootfitter with your current boots and maybe they can fix them, on the other hand be prepared to shell out for a new pair.
Sounds like you need to take another visit to the 'fitter'. Where did you have them done? If they aren't rectifying the issue it is their duty to make it right.

You made some interesting points though. I am sure it 'works' (to a point) in powder but isn't necessarily the right tactic to adopt. Skiing backwards in powder 'works' but I definitely wouldn't advise it ;)
