I have a digital inclinometer which is the waste of money since it doesn't work with temperatures of 0 and below. I also have a Theodolte application on iPhone with the same problem - the phone dies very quickly when out in sub-zero temperatures. I had to learn to use the ski poles to figure out the angle of the slope. It's a less precise method that gives about 2 degrees error either way, but at least it works in all conditions.

Quite possible. Higher up and around glaciers - where snow doesn't disappear completely for the summer it should be a nice top up for the existing base, or at least was OK for a day or two.

I was in Verbier this weekend and by Saturday afternoon all the snow up to 2400 m have melted and above only patches of snow remain, mostly in shaded spots. But while this week is expected to be mild it's still colder than before.

For November your choice is rather limited as the only resorts that are open in November are those with glaciers.

I think you will be better off with 188. You will lose lot of length due to rocker and 180 might feel a bit short. With this type of skis it's a fairly safe bet to go longer, but if you are not sure - try to demo.
