My technique is getting better each time I go skiing, but when I get on a steeper run how can I carve and take the speed out (like a breaking mechanism going downhill) what do I need to do ??
Can anyone help

Welcome to J2ski :D You could try turning uphill slightly towards the end of the turn. To scrub off excess speed where that is not an option, you could also skid the tails.

The fastest way to learn this would be to take a private lesson somewhere.

Before starting the new turn ease off the edge angle, and push the tails downhill slightly, then re set the edge for the next carved turn.

Quicker to do it, than to explain it!

Choose a slope that you are comfortable on, start a traverse, and then a sideslip,(ie, partialy flatten the skis).
Then experiment with moving your weight gradually forwards, and then backwards, during the sideslip traverse.
Then when you are going forwards, experiment with moving the knee in towards the hill.
Skidding is a modern derogatory term for what is an essential skill in skiing ~ Rear edge control.

You are all style Bandit. short radius turns keep the speed down ..Bend ze knees, careful with the hedges, plant ze pole, hup, change direction,Bend ze knees, careful with the hedges, plant ze pole,hup, then do it all again, and again, again etc.

I'm lost when it gets to the hedges bit :D
