I dont want to detract from your potential enjoyment, but for a first ever trip, I really would encourage as much learning as you can get. I had a week of full lessons, morning and afternoon, and was skiing parallel by the end of the week. Some people I know ski reds by the end of their first week, I suppose it depends if youve "got it" or not. I didnt have it, and had to work tremendously hard to find it!!!!
But assuming you enjoy it and progress, you'll want your next trip to be a development and not another beginner trip.

I am all about the learning and want as much time as possible. I think my worries were that I it might be too exhausting in one day and might put me off (certainly in the afternoon and next day!).

You will, indeed, be shattered.
My first week ever, I thought id be skiing like a pro and having it large in the bars each night.
I was crying in the bath at 6pm 2 evenings and too tired to have a 2nd beer some nights!!!!!

But it was all worth it in the long run.

I would not be so sure about doing full day private lessons unless you are both pretty physicaLly fit. Learning to ski initially is quite demanding and you will be pushed hard in a private lesson. Group lessons are not as intense.

By the way, do not be put off by this. The learning curve is steep and you will be amazed at your development even over a few days.

Above all, relax and enjoy the experience!

I think that organising group lessons over a weekend might be a bit of a struggle but there's no harm in making enquiries. I suspect that private lessons may be the way to go. On face value they are more expensive. They are also more intensive, so you definitely don't need all-day private lessons. Just remember to continue to put the techniques you were taught into practice after the lesson is over. -)

As for recommending a ski-school, you could do a lot worse than these guys:

My experience of British instructors is that they are as good as the locals and, what's more, there are no problems with the nuances of the language when trying to put across any technical points.

Prices are on the web-site. You might like to compare them with, say, Oxygene or ESF to see if you think they offer value for money. You'll probably be 'pottering' about on the green and quite possibly the blue runs, but 'hey' it's a start :) (and a great feeling) :) . I'm sure you'll have great fun. As Wanderer says, 'Just relax and enjoy it.' It is supposed to be a holiday after all. -)
