Fitness aside I think is very easy to get a bit sloppy with technique over time (e.g. leaning into slope). Once you are a reasonable skier under most conditions it doesn't even show up so easily done.

Always have a few mornings with an instructor and always benefit from them.
Video recording have always been one of the best ways to improve your skiing. This is just taking things onto the next level. Definitely the sort of thing would love to have but will probably stick with instructor for now.
Chamonix is by far the most convenient resort in Alps to get to. Transfer will be 25 euro each way with any of the many transfer companies.

Am not even so sure the gradient is that mellow in Cervinia. Just super wide piste, all directly in the fall line and nobody about so you end up skiing well. Definitely a great place for piste skis and afterburners.

Difficult to find a better ski resort in the world for skiing Nov-Mid Feb.
How about just going and enjoying the mountains? I spent a whole winter in Chamonix unable to ski downhill. Worst case you get to miss out on some tall stories about this deep/fast/steep etc.

1) Skiing uphill / skinning is possible long before you can go downhill and great for knee rehab (no lift pass required).
2) Ski towns are really quite pleasurable once people have departed for the slopes. Great breakfasts, long lunches.
3) Rehab takes time and suddenly you will have lots of it, go swimming, gym, snow shoeing.

Skiing is great, but it is the mountains which make it. You don't need to be fit to enjoy them.

Is ski in and out important? Basically you need somewhere with majority of skiing above 2000m. If you are really against last lift down then it somewhat narrows your options to the higher purpose built resorts.
