Well here is is my update, managed 2700m vertical and 3500m descent today and can barely walk. Still plenty of work to do before December.

Yep this one sucks especially if things were starting to come together. Still better a break than a ligament, if that is a +ve. Sounds like oxygen tent and a good book is required.

Nelly, you might want to consider just skinning uphill and lift down or cross country. Very good exercise for your knee and if the town has a swimming pool and gym would be a pretty productive holiday. Some fresh air in morning, gym etc in afternoon and you don't miss out on the food or party. Different sort of ski holiday but is how I spent all of 2013 and certainly beats work.
Group lesson and am pretty sure they do for all levels of skier and at that time of year would be in Verbier. I believe they do a return to skiing one which is what will try to jump in on.
Am planning on skiing with Warren Smith in early December to get a warm up in.
Have a set of Salomon Shogun mounted with touring bindings which are pretty versatile. Would have no issue of recommending a Salomon rocker 2 ski

Reality is a fat ski will never be as much fun on piste and visa versa. I would go for liveliest ski you can find between 95 and 105 given snow will be much better than NZ. Have heard a lot of good stuff about DPS but would definitely be more on the offpiste side as huge rocker on them.

If you're going for a season I would suggest a touring setup or you will be pretty frustrated come the spring. Would be tempted to get 2 x sets of skis even if the piste one was second hand. If you go for the middle ground of 84mm ish will end up with something which is pants
