slice it really thinly or you will chew on it for days...best served with a nice glass of red wine and a selection of cheeses: tomme du savoire, reblechon and comte

It's air dried and supposed to be a bit chewy but has load of flavour. Best eaten with other stuff.
We do the hot cheese thing (raclette) with new potatoes and a plate of scary meats (including saucisson, mountain ham etc.) and accompanied by silverskin onions and small gherkins.
Always reminds me of the Alps.... sigh
