Maybe this happens in resorts but I'm oblivious to it - sometimes for example when a group with greatly differing abilities cannot all can ski together, is there such a thing as whereby you can rock up to say the top of a main gondola in a resort at a dedicated time eg 10:00 and choose from a colour coded group to suit your ability and off you go. Main advantage is that you are not skiing alone and also in a group where you feel comfortable (almost like speed dating on the mountain). Or do I have Utopian wishes??

Some countries (not France) the tour operators off ski guiding. I have done it in a few occasions and happens as you described (tends to be intermediate upwards). Great for getting to know others and exploring the mountains. In France the relevant authorities don't let anyone but ESF do this kind of thing - but they charge €€€

The Ski club of Great Britain offer a ski-guiding service in some resorts and a heavily discounted instructor led guiding in some French resorts (no longer able to offer guiding there due to actions of ESF  ). It might be worth looking at their website for details:

We have done ski guiding with various T/Os and it is brilliant and this is something exactly the same for independent travelling groups, rock up and whoever is around just head off but not with a guide. Sometimes not everybody wants to do the same thing.
