Your point on logistics is well taken , but I think you would be unlucky not to sort out teething troubles with a couple of visits in the week. Usually you would leave them after skiing and pick up next morning. In the end I suppose people will only suggest what worked for them, but I would stress it is all too easy to buy boots that feel fine because they are too big, and as others have pointed out as soon as the inners start to compress and your skiing improves, you will have problems.( done it myself with my 1st pair, and I know others who have done the same)

re fitting..I am sure a recommended fitter at a decent outlet in resort, will do a good job of customising your boots...If you buy from a good outlet they will guarantee to get them right . If they will not guarantee to do so , go elsewhere.I only know 1 person who has bought boots that didn't need modification to get them perfect.
Until you are sure you are hoohed I would avoid expensive gear. Layers are the key. A semi decent wind/waterproof with a gilLet and fleece underneath is just as effective as a designer ski jacket and much more versitile and can be used in other situations. Don't skimp on gloves especially for kids .If you do buy cheap ones get two pairs so you can change into a dry pair if they get wet and cold.
I always carry spare gloves and hat. If you are miles from base and drop a glove, spares will save the day.

who wears a seat belt or cycle helmet..true it is up to you but please make sure your kids wear a helmet
lucky you , I will be there for 6 weeks. Just remember Cham is a real skiers resort. Don't be intimidated by all the high mountain tourers ..It can be an extreme resort if you choose it to be. Build up your confidence at La Tour and the pists of Brevant and Flegere, but eventually when you are ready for a day off piste at the Grande Montets you will never look back.
Is 65 too old to try skiing?

at 68 I still can't get enough..but remember if you are starting you will take falls..be honest with yourself, if you can risk it , go for it. Otherwise take up shoeing in a really good venue like the chamonix valley. I have introduced several retired people to it and it can be done at any level from gentle valley strolls to high mountain day trips. If you can walk you can shoe. Just remember not to try and walk backwards.
Also you can try some of the green cross country ski routes.
my comments were aimed at a family with kids, probably on a budjet otherwise they wouldn't be self catering.
