Stick to non peak weeks ie out of school time and leave it until last minute and you'll find something good. Skiworld are an excellent tour op and they often do great late deals.
Depends when you want to go, but I like early March - longer afternoons, a bit of sun, and some fresh snow often - depends where you go.

France I believe is expensive one Quoting 35 Euros for a Hamburger in one resort
Pretty sure someone has probably paid that in Austria too. France can be done cheaply, it would be daft to write off a whole resort on the strength of a hamburger.
