When you become a really good skier you will use carving in almost all your turns, even moguls...
Carving isn't all about wide radius and open pistes, its about aggressive skiing, you have to put your weight forward and use your whole body. Skiing/carving isn't just use of legs, like any sport you must use your whole body and only time will teach you how to do this efficiently and well.
it's a fine balance between you being fully in control and allowing your skis the control... like riding a motorcycle, if you try to force your skis to do something they don't want to... it ends badly
