I have found over the years that you tend to get what you pay for.
A good example is the Milky was week pass mentioned above, it was less than €200 a couple of years ago for a week compared to Three Valleys or Espace Killy which were about €300.
I love skiing in Italy and have skied everywhere but the Dolomites so far but even I will admit that there are a lot of ski areas that could do with some more modern lifts. I'll happily manage a few slower older lifts and benefit from cheap and excellent food in Italy as a trade off.
Horses for courses.
When in doubt?....Flat out.

Hey, if your wife ever changes her mind, take her to the Dolomites (no "hole in the ground" there, I can assure you!!) I don't know the ViaLattea at all, although I believe it's not the most modern of the areas. There are a lot of smaller resorts in Italy, which I personally like as they can be quieter and you can get good deals, particularly if you avoid Christmas, New Year and half term. A lot of them also offer off piste opportunities and other activities (snow shoeing, cross country, winter walks)are good fun. Personally I would not spend a whole week in a smaller resort because I don't go off piste (not good enough) and given that I can only ski a few days a year, I tend to go to the Dolomites for a week in, and split 2/3 days in Madesimo and 2/3 days in Chiesa in Valmalenco around New Year.
But back to the topic "easy skiing" if you're still looking for places to go, why not try the Dolomites? Val Badia or even Alpe di Siusi? Val Badia has a lot of easy blues and a few reds but if you feel confident after a few runs, there are a couple of blacks and, with the Dolomiti Superski, you can venture in the neighbouring areas. Alpe di Siusi has loads of wide runs, (easy reds) and you can take the gondola down to Ortisei and the lift up on the other side to go to Seceda. Alternatively, if you go to Val di Fassa you have the area of Col Rodella (reds), Buffaure (reds) and Vigo di Fassa (blues) that is definitely worth exploring (to get from Canazei or Campitello to Vigo you need the skibus though) There's a good webcam website (panomax) with webcams scattered across the Dolomites that may whet your appetite.
Wherever you go, enjoy it!

Thanks again, and thank you DougR for your additional comments. It's all very interesting, and we're clearly all very happy skiing in various places and all have our differing perspectives. :-)

Decision is ongoing (!) - we may return to the Dolomites or Skiwelt as both wonderful places and suitable for us, but looking for somewhere different I think, and we're past looking for challenges, just want some nice leisurely skiing nowadays!! And a great hotel. It's all good fun researching all these places - so much choice though!! At least it's narrowed down to two countries. If anyone has specific experience of Kirchberg I'd be interested to hear more.

We have been to Niederau twice staying at Hannes and Sonnschein.
Both hotels have their pros and cons but would stay at both again.
Lots of easy skiing, apres is not manic by anyone's standards and the schools are well known for high standards and for particularly beginners/those not too confident.

Oops, missed the Italy bit.

Bardonecchia and Courmayeur would both suit your needs.
Have stayed at Hotel Rive in Bardonecchia - excellent place to stay and at Dei Camosci in Courmayeur which is welcoming, clean, comfortable & where you will never go hungry!

Lofer in Austria, all the details on Bergfex, it is in Salzburgerland, 40 mins from Salzburg, not used by any British tour operators, a lovely mix of Scandinavians and East Europeans. Gondola up to the main slopes, we're off for the 6th time this year, ticks a lit of boxes advert few left queues, and everyone is very polite from lift attendants to skiers
Rather a bad day on the slopes than a good day in the office!
