We did an Easter trip to Champoluc a couple of seasons ago, and are considering it again for this year. There's a short report here :- Easter in Champoluc.
Likely to be more snow on the ground this year, but it was still good then - just slushy lower down in the afternoons. Pistes and lifts very quiet apart from the Easter Monday.
Which village you choose is really down to your preferences... Champoluc is a reasonable-sized village on one side of the Monterosa area; Gressoney and Alagna are smaller and Staffal's just a hamlet really.
