Any ideas for a cross country getaway in Europe from 25 Novemeber to 28 November???

I know there are plenty of resorts with cross country trails, the only one I can think of at the moment is Livignio, Italy.

Scandinavia! Lapland has hundreds of miles of cross-country trails.
