I'm going to sound like a real winner for asking this... How does one properly use poles, use as a guide or something to prevent ones ass from hitting the ground?

Well, all of those things and more, depending on the situation!
Maybe it's time you considered having a lesson or 2, once you're ready. It's easier to ski, if you know the "why" as well as the "what" :D

LOL that too green skiier! I did have a lesson or two I just picked 3 weeks after I messed up my knee to take it so I was way more concerned about that then where my poles needed to be :) But definatley before I go to Aspen or the local mole-hill for that matter I'll be taking lessons and going from the start....
