You can get lucky if you're careful (smaller resorts where the Tour Ops don't go) but, yes, next week will be busy in much of France, Austria and Switzerland (a lot of France, most of UK, a lot of Netherlands and some of Germany are all on half-term next week).

That said, snow conditions are good just about everywhere and almost all lifts and pistes should be open so that might ease the pressure a little.

Your best bet is probably to look at Italy I think; IIRC they don't do February half-term and get much less of an influx by car from elsewhere than, e.g. France and Austria.

Dolomites have just had a good snowfall so could be some good options in the smaller villages around the Sella Ronda maybe?

Italy has Carnevale, I think, but no real half-term winter break. And Carnevale is in March this year according to Google. So Italy would be good.

Somewhere in Italy or Switzerland, in Italy the half term holidays don't start until the beginning of March. In most parts of Switzerland they don't start until the last week of February and the strength of the Swiss Franc means that lots ski resorts are operating at well below capacity.
