I was wondering if anyone could recommend a resort super close to the piste but one that is also affordable and has activities for those that dont ski.

You are really going to be struggling to get something like this in Aspen. Hotels there are expensive at the best of times. Christmas is really busy too, so you won't find many deals.
However, Snowmass is about is 20-30mins away from Aspen by free bus. The lift pass covers Aspen, Aspen Highland and Buttermilk.
Snowmass is great mountain in its own right. Snowmass is a purpose built resort, so there are a lot of hotels close to the lifts/slopes. They are cheaper than Aspen, but I don't think you'll get anything super cheap at that time of year.
