I think it depends very much on whereabouts you are staying.
Meribel is a "tall" resort going right up the hill from the Chaudanne at the bottom to Ronde Point des Pistes at the top (actually more above that around Altiport but that doen't really count as "resort" I suppose).
Also is it a beer or five after a ski you want or an evening out?
So ....
Where are you staying and what type of accomodation? Hotel? Catered chalet? Apartment?
and ...
What is apres ski to your group - wild and woolly, or a quiet drink or so?

Cactus bar close to the Chaudanne is a good choice for straight off the piste beer + happy hours!
Can suggest others in Meribel Village or Mottaret depending where you are staying.

cactus in now called meribar, or you have Jacks bar also at he chaudanne, walk up the hill a few hundred yards and you have Bar-o-meter on the left, keep going another few hundred and you have the tavern 9on the road junction or look back and to the right and find scotts bar (which last year had the cheapest beer in town (better even than my discounted rate for working at the national alpine champs)
not a cheap place to drink, but if you search you can find a few "happy hours" and Jacks tend to do some silly games at times, last one i say you threw a dice to see if you paid for your round or not...i seem to remember winning :)

All the happy hour bars offer pitchers of beer by far the cheapest way to buy !
