My knees are fine ..I took quite a few lessons in the beginning last year when I took up skiing at 65..I find my self doing stem christy's when I do my turns more so carving left then right.am trying to break this habit..maybe more lessons?? I have been video taped so I can see how I ski and it looks like I don't always complete my turn or start my turn to soon..so maybe that is the problem..
any suggestions would be helpful.

at 68 I still can't get enough..but remember if you are starting you will take falls..be honest with yourself, if you can risk it , go for it. Otherwise take up shoeing in a really good venue like the chamonix valley. I have introduced several retired people to it and it can be done at any level from gentle valley strolls to high mountain day trips. If you can walk you can shoe. Just remember not to try and walk backwards.
Also you can try some of the green cross country ski routes.

No not too old just make sure there are easy runs and have a few lessons make sure boots fit well. Don't do too much in one go say half days at first.

I only started a few years ago and am not a sports person but now really enjoy.

Your mum may be best to wear knee supports, I have some which appear to work well, got mine from physio room.

Your never to old to try something new, Just take a little bit more caution :)
