Looking to go this December, just after Christmas. Any suggestions of definite snow? Is Saalbach any good?

don't know about Saalbach's snow record but in Austria Obertuern is pretty snow sure....been a couple of time just before xmas

Saalbach is quite low so not as snow sure as other parts of Austria plus the north/south bearing of the valley means one side icy and the sunnyside slushy, but like everything in the mountains it can vary massively from week to week. Pre xmas is a great time in SH although not everything is open. Either way you'll have a blast.

Niederau is a good option, there you have the inter connecting lift at Auffach and of course you can easily get to the Ski Welt

That is true about Saalbach. Also true about Niederau, due to it's north facing slopes, and snow collecting behind the tree lines.
The Schiwelt is good but also varied.
The Oetztal is a good shout but is more expensive.
